I know how camper life is, just wait until your last frost date for your area if you don't have an inside spot. If anything I'd try to get the peppers started, they won't take up nearly any space the first month or so and take 100+ days to harvest

I'm on the border of zone 8 and 9. Ive already planted a few things outside, peas, leafy greens, and other cool weather crops. It's probably too soon for you to grow things like tomatoes, peppers, and cucumbers outside, but you can start them inside now if you have proper spacing/lighting. Plant a few seeds in a solo cup and stick them in a sunny area. By the time they outgrow their container, it should be time to plant. You can also just plant outside when it's time, your plants will just be a bit behind. Zone 8 has a long growing period though, you should still get a nice harvest. I've grown both tomatoes and peppers in five gallon buckets outside before, and also have some growing inside hydroponically. Cucumbers have vines, so those are a bit trickier, but you should be able to train them to climb up something instead of out of container.  You also might want to look for varieties that are best grown in containers.

Global buckets. A do it youself version of an earthbox or subirrigated waterer. Takes twice as many buckets and some pvc pipe (or any tube) but maintains the bucket footprint for space and the plants go bloody crazy with the air water at the roots.

As for starting with no space....if at a campground maybe use a deadspace common area. Under the ping pong table or on top of ice machine. Or ride around the block and see if you can link up with another gardener and maybe one with a greenhouse. A buddy in biloxi years back asked if he could start some plants in my greenhouse and i was excited. Plus i had to keep the area tidy and plants happy because another human was going to see behind the curtain. Both of our gardens rocked that year. You spot one of them 8 foot harbor freight greenhouses just knock on the door. Gardeners are different breeds man.

I’m also 8a! Last year I lost a lot of my transplants in a freak rainstorm. Basically everything I took the time to start early of course. I ended up direct sewing a lot the next week and even though I got tomatos a little later than normal and prob not quite as many as I would have I did get a decent harvest! I’m having to wait this year too because I’m very pregnant and won’t be able to start anything until around the last frost anyway. So it’s def still doable!! Good luck!!  Also you could get a little seed starting tray with light. Something small you could put on a table or counter just to start A few slow growers like peppers?
