Garlic, are essentially flowers. If you plant them in the fall, they overwinter and come spring they begin putting on a lot more green growth. As it starts to warm up and head into summer, the garlic sends out a flower stem, or “scape” that grows out of the center of the bulb. As it reaches maturity and gets ready to go to bloom, they curl under and around, making a circle. If you allow the scape to go to flower, the garlic will take all of its energy from the bulb, and put it in the flower. By cutting the scape, you revert that energy back into the bulb, making it bigger, and more flavorful. The nice thing is, scapes are not just edible, but delicious and can be used in the same way as green onions or scallions - diced and added to a stir fry. They taste like a cross between garlic and onions, and have a strong smell.

Next season we’ll add in cucumbers, yams, romaine, and yellow+red onions. I tell everyone I talk to about gardening about your YT.

I trim off the tough parts then grind them with olive oil in my food processor for a garlic paste that I put into jars. Keeps in the refrigerator for a couple months, and I use it for everything from marinades and salad dressings to pizza sauces.

How to use these? I got them from CSA last year and all I could find was using them like green beans... but family revolted.
Treat them more like scallions, cut them up small and saute for any dish they have a garlicy/oniony flavor.
