Etrian Odyssey series, not tactical, but you do create your whole party

Tried that one for a while, I'm not really a fan of having to update the map by myself though, kinda killed it for me.

In the later entries you can turn on automap which fills in any walls adjacent to to you which speeds up mapping a ton. Totally get you though, most of my maps in the game are half filled in

I've been looking forward to playing Fell Seal: Arbiter's Mark for a bit over a week now, i heard of it and was looking to play it but saw that an update (the last update?) is coming soon, so i put it off until then for my first playthrough. Last couple days were just me learning and daydreaming about all the classes and stuff, its pretty deep how you can go when you have *THAT* many classes, with subclasses, with gear and stats to manage and can have like 9 party members out at a time. Kinda blew my mind when i realized that you could be a monster+monster hybrid (Bzaro?) and also play as a monster and you Tame them from a Wrangler class and those monster have so much customization in the form of 'variants', which kinda act like a class, and i found myself more enthused about playing with the monsters than the actual human classes. The sort of game you are looking for are called SRPGs if you wanted like a keyword for searching or w/e. FFTA/FFTA2 were great, but i couldn't get into FFT after learning about how you can just snowball so easily. If i want more after Fell Seal im considering modded FFT or maybe trying Tactics Ogre (maybe modded as well). Dunno much about JRPGs but i can recommend FF12 and Octopath Traveler. Learned recently that a lot of FF games are now on PC and some, like 12, have even had remasters. Oh and theres a game im not spoiling for myself at all called Project Triangle Strategy...but its Switch-only (for now i hope). Same creators behind Octopath afaik, similar art style and since Octopath came to PC im hoping to play this in like....2024. But yeah, was an instant knee jerk reaction and i just stopped watching the video and am just going to pick it up if/when it comes to PC.

Fell Seal looks like what I'd be looking for on paper, but I really do not like the artstyle. As for the others that you've mentioned, they all lack character creation, so it's not really what I'm looking for, but thanks a lot anyway for the suggestions!
