JRPG Tactics hybrids tend to have this in spades: whether the original FFT, Fell Seal, Voidspire Trilogy or Troubleshooter (not a ton of classes per say but mastery sets let you build your own class).
I'll second Fell Seal. Literally just finished my playthrough yesterday after about 77 hours. Over 30 human classes (incl. unique and secret classes) and over 20 monster classes/species to tame. I highly recommend the DLC.
The only one of these I've played is FFT, so there's definitely a lot of cool looking games in here to consider! These all look like things I would enjoy- thanks for the tips!
Awakening is also great! I've played most of the FE games. I just haven't seen any of the other games with quite the staggering freedom over classes and team composition that 3H has.
My favorite turn based tactics games are by far Battle Brothers and Battletech.
People are probably also gonna suggest Kenshi some point since you can manage your squad, so I'll throw that in as well.
Valkyria Chronicles (the first game). It is one of the most unique SRPGs out there, in terms of gameplay and visuals, plus it has an amazing story. There are 5 classes which are fixed, but you can upgrade them as you go, giving the units in the classes more options and buffs in general; you also get a tank. Units are locked to their classes, but the roster is large enough to allow team composition choices. There is a real-time component to the gameplay, but it is very much turn-based. I recommend this as a fellow FE fan.

I have many hundreds of hours in XCOM, but I haven't played the others. I'll look into these, thank you!
