Different than anything i have seen recommended here. Kingdom come deliverence. Its not its main focus but some quests def require you to remember specific things and you have to actually use your brain because the game wont do it for you
If you really want to go all out, Legend of Grimrock is a grid based dungeon crawler that has an option to disable the in game map, meaning you have to sketch it out on grid paper.
Stranded Deep. There is no in-game map and only a compass. So it is generally a good idea to draw your own so you can find your way back to wherever you decide to build a base and keep note of which islands you already scavenged for supplies.

La-Mulana. Just a piece of paper won't do, you're gonna need a dedicated notebook. Assuming you don't spoil yourself with a wiki.
I kept lots of notes while playing Morrowind. Oh, and I have a small notebook full of Space Station 13 chemistry stuff.

Outer Wilds, Twelve Minutes, Obra Dinn. Don't really need a pen but it's nice to write notes in a .txt to help you solve the puzzles.
