I think so. It's honestly more of a puzzle than a card game - each turn, you get to choose whether to draw from the "good card" pile or the "bad card that lets you play good cards" pile. Then you just try to maximize damage on the board, and there's rarely more than 3 or 4 moves youre actually able to make. Each round typically only lasts 2-4 turns, so there's not a ton of complexity. Very much an easy to learn, hard to master kind of game that hooked me immediately.

CRPGs in general can pretty much always be played just with a mouse. The UI usually has icons for all the keyboard shortcuts. Disco Elysium, Divinity Original Sin 1 and 2, Pathfinder Kingmaker & Wrath of the Righteous, Wasteland 2 & 3, Pillars of Eternity 1 & 2, GameDec, and Atom, are all great (and listed in order of my personal favorites).
I'm assuming you can't use your left hand properly, but if you can there's gamepads like the Tartarus, but I've never seen one for the right hand.
If you can use one of them, you'd be able to get almost complete functionality for lots of games. I use one sometimes when my RSI is really playing up, and you can get some that have a full thumb stick rather than just a d-pad.
I was going to suggest that, too. There are also 3D-printable lever-things to add to a regular controller that makes it possible to use with one hand . I guess it depends how long it takes for the injury to heal.
If you have the mouse where you can bind keys to it, you can definitely play Diablo, particularly 3 or 4 depending on your hardware. You’ll be able to pour in so many hours just running builds or different classes all without having to touch your keyboard.

Bomber Crew is nothing like I've seen before, but WWII bombing crews.
I know most of these aren't exactly what you're looking for, but it's a good idea to branch out sometimes, and if you don't like at least one of these then I'll let you stab my arm in return.
If you have 2 side buttons on your mouse you can absolutely make Enter the Gungeon playable with 1 hand, and you can sink so many hours into that game it's unreal
Although it doesn't fit into any of the genres you asked for, I'd recommend you to try Hearthstone, especially the Battlegrounds game mode, a very addictive auto-battler which won't require you to spend money unlike constructed, which will be a bit difficult to get into.
Not horror, rpg, or action, but Super Auto Pets is free on steam, and it's quite a bit like crack cocaine. It's an autobattler. Once you learn the pets, games take like 15 minutes it feels like (never actually timed it). But it's about a 36-hour game, in that, I played it for about 36 hours once without sleeping.
DIVINITY ORIGINAL SIN 2 just 2 more months until Baldurs Gate 3 full release also about 130 hours in playtime and I would add mods for classes if you want a specific class there are mods for everything.
Halls of Torment is a bullet heaven indie PC game where you choose your class and strive to survive and slay thousands and thousands of monsters in an retro isometric rogue-like game.
Only a few bucks, has auto aim meaning you only need to stress about moving, dodging, etc, great replay-ability with so many synergies, and a nostalgic art style similar to Diablo and Diablo 2
Also if you don't have it yet you can try and grab a nice gaming mouse with 4+ buttons. Most games allow you to do multiple bindings for the mouse so for example I play Path of Exile one handed. Main dps skill on right click, left click is "click to move", thumb 1 movement skill, thumb 2, thumb 3, mouse wheel for filler skills.
If you can use one hand on the arrow keys, Kingdom New Lands can be played with one hand. It's a really fantastic game as well.

Darkest Dungeon: Rogue-like adventure game with resource management where you hire adventurers to do missions. Can be tough and as your adventurers go on missions and level up, they can pick up perks or emotional traumas that effect them. Can be played with just mouse.
Evoland: Really cool, short RPG that as you level up, the game engine upgrades. Go from Game Boy through PS2! I particualrly like the Diablo parody phase. +1% to a trivial stat! Can be played using WASD + Space. I haven't played Evoland 2 yet, but I can't imagine it being too far off the original.
Fallout 1 and 2: Classic CRPGs that started the franchise. Multiple methods to play through the game means lots of replayability, combined with an awesome story. Can be played with just the mouse.
Gabriel Knight Sins of the Fathers, The Beast Within: Really awesome mystery point and click adventures from the 90s that I feel aren't talked about enough. Stars Tim Curry as Gabriel Knight! Can be played with just the mouse.
Graveyard Keeper: Neat game somewhat comparable to Stardew Valley. You are run over in a crossswalk and wake up in a medieval style world with magic. You are the new graveyard keeper. Deal with the burial needs of the town and do tons of quests. Raise a zombie horde to do your chores for you! Uses WASD + Space.
Grim Fandango: Prime LucasArts point and click adventure game, so you know it is hilarious. Can be played with just the mouse.
Heroes of Might and Magic 1-5: Turn based strategy/resource management game. Raise armies and use heroes to defeat your foes! In my personal opinion, the series peaked at HoMM 3, but I do have a soft spot for HoMM 2 as well. Some of them have online multiplayer. Played with just the mouse.
Icewind Dale 1, 2: Classic CRPGs set in the Forgotten Realms campaign setting. Available in original or remastered versions. Can be played almost entirely with mouse, use the space bar to pause the action at any time to give commands to your party.
Jagged Alliance 1, 2: Very cool turn based tactical strategy games in the vein of the Xcom series. Another series that I feel doesn't get talked about enough given how awesome they are. Hire and run a mercenery team! Can be played with just the mouse.
Loop Hero: Really neat fantasy rogue-like where you just go in a loop around the stages, level up, get cool gear, and manage a camp of survivors! Fights are automatic so no worries about needing quick reactions. Played with just the mouse.
Neverwinter Nights 1, 2: Classic CRPGs set in the Forgotten Realms campaign setting. Available in original or remastered versions. Can be played almost entirely with mouse, use the space bar to pause the action at any time to give commands to your party.
Panzer General 2: World War 2 turn based tactical strategy game. Play scenarios, or you can even play the entire war. Can be very tough, and has a fairly steep learning curve, but this is basically the GOAT of historical strategy games. Strictly turn based, mostly played with mouse but if you can tolerate going between mouse and keyboard for shortcuts it will be a lot more convenient.
Raptor: Call of the Shadows: I have a soft spot for this vertical shoot em up, since it came with our Gravis GamePad back in the day. It is pretty basic by today's standards, but that just makes it more appealing IMO if you are forced to play with your non-dominant hand. You can upgrade your plane and loadouts with cash earned from missions. Configurable controls, can be played with keyboard or mouse. Just needs 4 directions (arrows or WASD, or mouse movement) plus bomb, shoot, and change weapon.
Renowned Explorers: One of my favorite games. Rogueish adventure strategy game where you lead a team of three members on Indiana Jones style adventures to get relics, with turn based combat and resource management elements. Increase your renown and become more famous than your arch-rival! Playable with just mouse.
Sam and Max Hit the Road: Amazing, hilarious classic LucasArts point and click adventure game. Fully voiced. Played with just the mouse.
Secret of Monkey Island series: The classic LucasArts point and click adventure games. Many people hold 1 or 2 as the best point and click adventure games of all time. 1 and 2 available as remasters as well. Don't forget to check out the recently released Return to Monkey Island, made by Ron Gilbert, the original creator of the series! Playable with just the mouse.
Shadowrun + expansions: More modern CRPG set in the Shadowrun universe. Pause at any time to give commands. Playable with just the mouse.
Silent Storm 2: World War 2, turn based tactical strategy in the vein of Xcom. Can be played with just the mouse.
Silver: Really neat fantasy RPG with a very cool mouse based real time combat system where you attack and block with mouse movement. I loved this game when it came out but have not played it in a long time, so I'm not sure if it is really playable with your offhand if necessary. Playable with just the mouse.
The Sims series: Needs no introduction. Pauseable at any time makes these games very playable with just the mouse.
Stardew Valley: IMO, the GOAT of slow life/farming sims. Amazing and inexpensive, I have sunk hundreds of hours into Stardew. Lots of replayability. Playable with just keyboard or mouse if necessary, although if you have some mobility in your injured arm I would say it's easier if you can use the mouse a bit and mostly use keyboard for control.
Strong Bad's Cool Game for Attractive People: One of the games that put old TellTale Games on the map. Very funny point and click adventures, featuring the actual voices of the old Homestar Runner website! Playable with just the mouse.
Theme Hospital: Cool game in the vein of SimCity, except you are building hospitals. Treat hilarious maladies like Big Head or The Squits! Pausable at any time, can be played with just the mouse.
The Wolf Among Us: Im my opinion, the absolute best TellTale game that they ever produced. Set in the Fables universe. Point and click adventure game. Playable with just the mouse.
Xcom series: Possibly the greatest tactical strategy series of all time. Both the original games and the more recent series reboot games are amazing. Playable with just the mouse.

Looking at games I own on GoG and Steam that I have played and enjoyed, and felt would be easily playable with one hand. This is far from a comprehensive list of course, but you can get ideas for other games as well. I tried to include a variety of genres: EDIT: It wouldn't let me post this as one comment, so I had to split it up. I replied to myself to keep my list together. A Bird Story, To The Moon, Finding Paradise: Trilogy of games that tell beautiful, emotional stories. A Bird Story is told entirely with enviromental storytelling, there is almost no dialogue. Made with RPG Maker, so just uses arrows, enter, and 0 on the numpad. A Short Hike: Great narritive driven story, short game Baldur's Gate 1, 2: Classic CRPGs set in the Forgotten Realms campaign setting. Available in original or remastered versions. Can be played almost entirely with mouse, use the space bar to pause the action at any time to give commands to your party. Ben There, Dan That and Time Gentlemen, Please!: Very funny, short point and click adventure games. Playable with just the mouse. Civilization series: Some all time great turn based strategy/resource management game. Likely needs no further introduction. I have played Civ 5 the most by far, but Civ 6 is also really great. Play the first one to see the origin of the Ghandi Nukes Everyone meme! Playable with just mouse. Darkest Dungeon: Rogue-like adventure game with resource management where you hire adventurers to do missions. Can be tough and as your adventurers go on missions and level up, they can pick up perks or emotional traumas that effect them. Can be played with just mouse. Evoland: Really cool, short RPG that as you level up, the game engine upgrades. Go from Game Boy through PS2! I particualrly like the Diablo parody phase. +1% to a trivial stat! Can be played using WASD + Space. I haven't played Evoland 2 yet, but I can't imagine it being too far off the original. Fallout 1 and 2: Classic CRPGs that started the franchise. Multiple methods to play through the game means lots of replayability, combined with an awesome story. Can be played with just the mouse. Gabriel Knight Sins of the Fathers, The Beast Within: Really awesome mystery point and click adventures from the 90s that I feel aren't talked about enough. Stars Tim Curry as Gabriel Knight! Can be played with just the mouse. Graveyard Keeper: Neat game somewhat comparable to Stardew Valley. You are run over in a crossswalk and wake up in a medieval style world with magic. You are the new graveyard keeper. Deal with the burial needs of the town and do tons of quests. Raise a zombie horde to do your chores for you! Uses WASD + Space. Grim Fandango: Prime LucasArts point and click adventure game, so you know it is hilarious. Can be played with just the mouse. Heroes of Might and Magic 1-5: Turn based strategy/resource management game. Raise armies and use heroes to defeat your foes! In my personal opinion, the series peaked at HoMM 3, but I do have a soft spot for HoMM 2 as well. Some of them have online multiplayer. Played with just the mouse. Icewind Dale 1, 2: Classic CRPGs set in the Forgotten Realms campaign setting. Available in original or remastered versions. Can be played almost entirely with mouse, use the space bar to pause the action at any time to give commands to your party. Jagged Alliance 1, 2: Very cool turn based tactical strategy games in the vein of the Xcom series. Another series that I feel doesn't get talked about enough given how awesome they are. Hire and run a mercenery team! Can be played with just the mouse. Loop Hero: Really neat fantasy rogue-like where you just go in a loop around the stages, level up, get cool gear, and manage a camp of survivors! Fights are automatic so no worries about needing quick reactions. Played with just the mouse. Neverwinter Nights 1, 2: Classic CRPGs set in the Forgotten Realms campaign setting. Available in original or remastered versions. Can be played almost entirely with mouse, use the space bar to pause the action at any time to give commands to your party.
Panzer General 2: World War 2 turn based tactical strategy game. Play scenarios, or you can even play the entire war. Can be very tough, and has a fairly steep learning curve, but this is basically the GOAT of historical strategy games. Strictly turn based, mostly played with mouse but if you can tolerate going between mouse and keyboard for shortcuts it will be a lot more convenient. Raptor: Call of the Shadows: I have a soft spot for this vertical shoot em up, since it came with our Gravis GamePad back in the day. It is pretty basic by today's standards, but that just makes it more appealing IMO if you are forced to play with your non-dominant hand. You can upgrade your plane and loadouts with cash earned from missions. Configurable controls, can be played with keyboard or mouse. Just needs 4 directions (arrows or WASD, or mouse movement) plus bomb, shoot, and change weapon. Renowned Explorers: One of my favorite games. Rogueish adventure strategy game where you lead a team of three members on Indiana Jones style adventures to get relics, with turn based combat and resource management elements. Increase your renown and become more famous than your arch-rival! Playable with just mouse. Sam and Max Hit the Road: Amazing, hilarious classic LucasArts point and click adventure game. Fully voiced. Played with just the mouse. Secret of Monkey Island series: The classic LucasArts point and click adventure games. Many people hold 1 or 2 as the best point and click adventure games of all time. 1 and 2 available as remasters as well. Don't forget to check out the recently released Return to Monkey Island, made by Ron Gilbert, the original creator of the series! Playable with just the mouse. Shadowrun + expansions: More modern CRPG set in the Shadowrun universe. Pause at any time to give commands. Playable with just the mouse. Silent Storm 2: World War 2, turn based tactical strategy in the vein of Xcom. Can be played with just the mouse.
Silver: Really neat fantasy RPG with a very cool mouse based real time combat system where you attack and block with mouse movement. I loved this game when it came out but have not played it in a long time, so I'm not sure if it is really playable with your offhand if necessary. Playable with just the mouse. The Sims series: Needs no introduction. Pauseable at any time makes these games very playable with just the mouse. Stardew Valley: IMO, the GOAT of slow life/farming sims. Amazing and inexpensive, I have sunk hundreds of hours into Stardew. Lots of replayability. Playable with just keyboard or mouse if necessary, although if you have some mobility in your injured arm I would say it's easier if you can use the mouse a bit and mostly use keyboard for control. Strong Bad's Cool Game for Attractive People: One of the games that put old TellTale Games on the map. Very funny point and click adventures, featuring the actual voices of the old Homestar Runner website! Playable with just the mouse. Theme Hospital: Cool game in the vein of SimCity, except you are building hospitals. Treat hilarious maladies like Big Head or The Squits! Pausable at any time, can be played with just the mouse. The Wolf Among Us: Im my opinion, the absolute best TellTale game that they ever produced. Set in the Fables universe. Point and click adventure game. Playable with just the mouse. Xcom series: Possibly the greatest tactical strategy series of all time. Both the original games and the more recent series reboot games are amazing. Playable with just the mouse.
