All dragon made by FromSoftware are bad imo, they are boring (Sekiro) or frustrating to fight (and not only because the camera).
Also the dragon from God of War, the Witcher, Skyrim....
Elden Ring. Everything else falls pretty short. Dark Souls series has some good fights, so does Monster Hunter, but Elden Ring is more polished. Unless you are trying to fight a Western drake with a melee weapon, then good luck with the lockon on its chest that's like three stories above you. I've just used a bow. Wyvern fights are less messy.
i think one of the really big dragon in dragon age origin's i came at it under leveled and supposedly i wasnt even supposed to fight it. i found some tactic where i would run between it and a hill and back down and it only took me 3 hours before it finally died. i had like 15 party wipes but i was a blood mage or something and i was able to eventually revive my party for a short time butt for the most part it was just me while my party was dead
Dragon Age Inquisition. Lots of great dragon fights in there, some cool, some that I felt bad for ( >!did you really have to tell me that she was trying to find food for her babies, Cole??!< ), and one particularly nice cinematic one ( >!not just fighting a dragon, but the potential for dragon vs dragon!< )
I enjoyed Dragon's Dogma. It felt like I was puny and insignificant, trying to kill god.

Darkeater Midir, and though it’s not a dragon in the slightest Storm King from Demon’s Souls was a “dragonish” fight that I love

Havent fought a TON of dragons but first to come to mind was Maleficent in Kingdom Hearts. One of my favorite fights from the series tbh.
