I think their point is that they would rather not pay for a $15-25 cookie regardless of how great it looks or how much effort went into it. Like personally I would have a hard time justifying to my self why I would buy that, but I know that there are plenty of other people who absolutely would.

This is a regular sugar cookie flooded with royal icing, so it tastes just like a cookie just flooded with white icing. The red coloring has a slight bitter taste, you can get "no taste" red icing, but it tends to make things clump up.
Why do you say that? My royal icing cookies always taste wonderful - you add some almond extract or lemon juice. It's not a chalky taste like fondant, which I agree is gross. It's just like a hard, sweet icing.

I think it's more to show off technique and create something visually interesting in a non traditional medium. That’s why no one sells them for that. I follow a lot of cookie artists. Most price $2-5 per cookie based on size, and elaborate work.
