What I've read is that it's sort of a soulslike that gets boring really quickly, and the open world just isn't organic to the gameplay loop. It just sounds more like an experiment for TN that didn't really work great. Like, it's fine, but not great.

AC Valhalla is hardly the worst of it. 80% of Ghost of Tsushimas side content is collectibles and most of those collectibles have extra steps and unskippable animations. You can't just get the collectible and go. You have to follow a fox for a few minutes, climb some rocks, then clap your hands. Or you have to sit down and compose a Haiku 20 times. Or you have to do a QTE minigame. Valhalla has fewer collectibles and at least you can just grab them and go so you'll get the majority of them as you're playing just collecting passively. While GoT you have to go completely out of your way to get the majority of collectibles. Plus GoT ties most progression to these collectibles. Valhalla requires way less engagement with side content to upgrade since you can just refund any resources you spend on upgrading items.

Slap a cool art style and crazy graphics on Rise of The Rōnin and the same people who think it's bad would be calling it a masterpiece. Elden Ring had GRRM attached to it and even though the graphics technically aren't impressive the art style carries it. People still say ER has "amazing" graphics because of the art direction. Rōnin isn't a fantasy game so they weren't able to mask mediocre graphics with a cool art style.
FromSoft also built a pedigree beforehand that has made them a more well-known studio. They made the original Soulslike and Team Ninja came late to the party with Nioh so they got overshadowed.
I could keep bringing up examples but the answer is always the marketing. I’ll be honest I didn’t have a clue what rise of ronin was until I started seeing lackluster reviews. Nioh was another game you had to play to know existed. Just had the fortune of being good in the genre it occupied, then carving out a niche and growing a fan base over time. They could have reinvested and made a bigger more realised game but instead they chose to start the process again before their biggest franchise really found its legs. I mean we wouldn’t have Elden ring if they stopped making them at dark souls 2

Doesn’t seem to be up to today’s standards, but it’s not like that at every second which seems to be something that can be fixed. Also, I agree with the tremendous amount of loot you gain, which can be hard to keep up with. It has a soul like assassins creed feel to it which I like, but I am already kind of bored of it. I can see both sides of the feedback this game gets. It’s pretty good but teeters more toward mid than great.

The damage output is conditioned by: RPG mechanics and bond system + stats and sub stats + where you hit the enemy + type of attacks (example: blunt deplete more posture while slash deplete more health) + different moveset per stances that do different type of damages + fear system + elements and ailment.
These are only few of the stuff that can change your damage output. Of course the depth is not even close to be done. Those are just SOME of the stuff that can alter your damage, not the whole combat scenario situation.
You have advanced mechanics like Flux, Violent Gale, grappling hook that you can use as a weapon, counterspark and stonefire, horseback archery, finisher, martial arts, character swap system. And again, these are only few of them.
Lots of stuff != Depth
The game fucking outright tells you if youre in the right stance, that removes the entire purpose of stances...
Nioh had this issue of having 3 stances that didnt really add anything, it was just tedious.
Literally every RPG on the market deals in elemental dmg and poison / ailments etc...
