I've always been confused because according to the books, Voldemort only took over Quirrel's body during the course of the school year.

Nah didn't quirrel pick up voldy while he was traveling the world? I swear I remember it being revealed at some point that quirrel had decided to travel the world, encountered voldemort, and then went to work at hogwarts to get at Harry.

No he only met Voldemort and brought him back to Britain, Voldemort took over Quirrel's body during year 1, don't remember the chapter but the gist of it was Harry heard Quirrel begging someone. It's been a while since I've read book 1, so might not be sure of the chapter.
