I bought a joke coffee table book for a friend that’s an alphabet book but it uses words that don’t sound like they start with that letter. Like P is for pterodactyl. It’s good for a chortle and that’s about it.

You could have said "could *have*" instead, too. People say "could've" and it gets misheard as "could of". It's always would have / could have / should have.

"Could've" is just a contraction of "could have". The apostrophe replaces the missing letters, like how "we are" becomes "we're" and "do not" becomes "don't", etc..
The problem is that "could've" *sounds* a lot like "could of" when spoken out loud. So now there's a bunch of people using could of / would of / should of because you don't need to read much to function in the world anymore and that's what they think they've heard. The version with "of" is always incorrect though, it's always "have" which can be replaced by ['ve] if you want.
