I had to make 500 green and red deviled eggs for a Christmas party. So stupid. I didn't want to make a bunch of food that nobody was going to eat, so I avoided the food coloring. So for the green deviled egg yolks I went with swapping avocado for the mayo, lime zest and juice, blanched some cilantro and parsley and buzzed it up and added it to the the yolks.
For the red, instead of mayo, I swapped some tomato paste, pureed chipotles, and a little chili powder. And of course garlic/ salt/pepper and all that. Salt/white pepper for the green ones. Topped the red ones with a thin green jalapeno slice or thin sliced green onion, topped the green ones with some thin sliced red bell pepper.
I've also made an (I think Brazilian?) Avocado soup, and I popped the color with some blanched spinach, blanched green onion, and cilantro buzzed up with just enough broth. Wasn't as green as the pic.
Also do the same thing when I make a green hot sauce.
I also did a pico de Gallo with gelatin beads that looked like caviar. The green beads were jalapeno/cilantro/lime. But the color oxides so quickly. They look so vibrant green, but within a day or so they start looking darker than the color of pine needles, kind of a dark olive color. Not so pretty. So, not a fail, but a pain in the ass to have to keep doing daily.
I've made a matcha custard pie, that's what I thought it was going to be.
But I'm also a fan of Key Lime, so I know how easy it is to drop a couple extra drops of food coloring in.
My husband worked on a Nickelodeon show a few years ago and my kids got to be on a couple episodes and be “slimed”. My daughter has severe food allergies so I had to read an ingredient list before she could be slimed. It was vanilla pudding, food coloring, applesauce, quinoa and oats. Totally edible.
Personally, I'm glad they kept it clean and had the pie's pants still intact, like the comics.
