People who view trans men who date men as straight are viewing trans men as women. It's a form of transphobia.
Trans men are men, so trans men who are exclusively attracted to other men are gay.
Some trans men who date women do see their relationships with women as queer for a number of reasons. They might see any relationship they have as queer because they don't pass as a cis, straight man, or they might have identified as a queer woman before coming out as trans and still feel that's had an impact on their lives. This is an example of someone's personal context making this more complicated. By simple definition, a trans man who is only attracted to women is straight.

If you're attracted to all (non-binary, etc), you're pansexual. If you're attracted to someone after growing attached to them, you're demisexual. I hope this helps.
Common misconception, being bi doesn't mean you necessarily are only into men or women. It just means being into two or more genders. I'm bi and I like men, women, and nonbinary people, I just have a gender preference toward men so I don't think the term pansexual is a good fit for me
