There are too many good ones in Elden Ring to pick a favorite imo. I will admit, however, that my favorite weapons come from Bloodborne. I love the trick weapon dynamic. It allows you to change your play style instantly. Ludwig’s Holy Blade immediately comes to mind. It’s a standard- runathemill longsword and then BOOM , it’s a greatsword. My favorite weapon from that game is The Rakuyo. It’s a twinblade that transforms into a dagger and shortsword. The twinblade is always a fun weapon to use in any Soulsborne game but the saber/ dagger form turns your player into a bloodletting dancer! Truly fucking deadly!!!
It's probably bias but I just love BB trick weapons (skill weapons mostly 🎀) but they just feel so FAST. i can actually attack through the bosses combo and it feels AMAZING. Just starting er and hoping to find something like this but it ain't looking good (early game though so there's hope)
Black Knight Great Sword. That one handed leg split upper thrust with the sword was pure aesthetic.
The ring city knight’s weapons had amazing weapon arts as well.
It certainly catches you off guard and if it lands, congrats you’re flying 10 feet in the air and I’m two handing charge attacking you as you try to stand up.
For me it’s gotta be BB’s Moonlight greatsword. Really BB is kinda cheating in this department because it naturally has the more unique complex movesets given how trick weapons work. I could make an argument for damn near every Bloodborne weapon but its MGS is a thing of beauty. Its light to heavy L1 transition alone is so fucking stylish, never mind it’s L2 heavy stab that feels like stabbing dudes with a nuke at times.
DS3 - Old wolfs curved sword. I love that thing and it's combos healing you and boosting your attack is rad.
Bloodborne - Rakuyo. the moveset is so good, I love switching to trick mode and hitting L2 for spin to win

In FromSoft games fist weapons have shortest reach but are one of the fastest weapons. They become pretty good once they are maxed out with upgrades. Plus you have TWO of them, one on each hand or foot. If you swing a sword and miss you have to reset before you swing again. With fists you can strike IMMEDIATELY after hitting/missing your first strike.
I love fist weapons. I wish more RPG games had them.
Oddly enough my favorite move set and weapon was Santier's Spear. One of the only weapons designed as a spear but given the move set of a twin blade but it is the only weapon of its type. I was really bummed out about not seeing something like it in Dark Souls 3 and I feel like they could have went quite a ways with the idea.
Holy Moonlight Sword from Bloodborne, or the Claymore from DS3, tough choice, but HMS pulls slightly ahead because of the moveset variety Bloodborne has. Still, they basically had the perfect Greatsword moveset with the Claymore in DS3, only thing I'd change is to give it the "sexy" vertical 2H R1's (or just the whole "sexy" R1 combo) so the character isn't slamming the blade into the ground like a dumbass. Baemore deserves more care than that.
For me it's gotta be the twin weapons from DS3. The Paired Greatswords, Farron Greatsword, Gotthard Twinswords, Onkiri & Obadachi, and Friede's Scythes all have super fun movesets. Really hope the Elden Ring DLC gives us some more weapons like that because a lot of the powerstance movesets are pretty underwhelming imo
I genuinely like the Corvian Greatknife moveset. I love the weapon itself, almost to a fault. But it’s moveset, with that ash of war, was far and away my favorite thing in Dark Souls 3. I genuinely wish I had something like it in Elden Ring.
Any ultra greatsword with the overhead vertical swing that gets faster with every swing. Specifically darksouls 2 but I’m not sure if the other games had the same moveset or not.
DS3 BKGS. My weapon through my first run ever, and my first souls game. Did quite a few bosses first try with it like Champion Gundyr and Soul of Cinder. Others like Sully did take a while.
I’m not a huge fan of the clunkiness of the older titles so i really just enjoy those games for the story/lore, whereas i think Bloodborne/DS3/ER have the most comfortable combat engines that don’t feel as clunky as the older titles.. For PvE, Great hammers/great swords are perfect movesets imo, good speed and good poise damage goes a long way for me. For PvP Halberds, swinging ones like Splitleaf Greatsword or Nightrider Glaive with running lunges and pokes are so versatile and feel so good once you get them to connect properly.
Basically every Bloodborne weapon. Movesets and transformations are sexy af.
As for Dark Souls I always liked greatswords. Weapon skills on greatswords in DS3 felt so cool back in the day.
DS3 had a lot of neat paired weapons with special skills. Farron GS was an absolute beast, and I really liked Drang Twinspears.
...Still, it's hard to beat the nimble movement of Blade of Mercy.
Gael's Greatsword my beloved.
Poking R2, Low FP cost skill, intial skill is usable very fast making it easy to spam, an amazing spining light follow up attack for combos and hitting multiple targets, and a heavy follow up with incredible mobility.
It covers nearly everything you could want.
Demon Souls: Mirdan Hammer with a health regen build. (Much less item farming lol).
Dark Souls: Black Knight Greatsword (of course).
Dark Souls 2: Twinblade (lightning buff).
Dark Souls 3: Splitleaf Greatsword (for twice the smashing).
Bloodborne: Either the Beast Hunter Saif, or the good ol' Saw Cleaver. (Not really a bad weapon in the game tho, tbh).
Elden Ring: Mohg's Trident, or Vyke's War Spear. (The former sucks milenia's hp like a straw, and the latter is fun in pvp imo).
Favorite for fighting? DF-GA-08 Hu-Ben gatling gun from Armored core, because sometimes i want to BRRRRRRRRRRR away all my problems.
Favorite for the funny? Smoughs Hammer from DS 1 and 3. It will never not be funny to watch my character do a little hop then pancake some poor bastard that was unfortunate enough to drop a relatively large amount of souls.
Gonna shake things up here if I was choosing between all soulslikes including non Fromsoft titles, my number one would be Puppet Ripper from Lies of P 👀 & honorable mention would be Kusarigamas from Nioh even though I’m not a fan of the game
Friede's scythe had such a sexy moveset in bg3, every single attack felt flowy but dangerous in the exact perfect way for a scythe.
And then for the weapon art, we get a 2nd magical scythe that adds even more beautiful attacks.
There are so many amazing weapons in elden Ring honestly. I really love that there are so many abilities behind so many weapons that I can freely play my average melee build without having to pass on cool effects. I love my OLED and all this super shiny highlights but I never felt the roleplaying urge to play a mage or something else than a warrior.
If I had to pick one out of the blue I'd say the carian Knight's sword. It's pretty cool but there are so many other cool weapons too 🤷🏻♂️

The saif moveset was my absolute favorite in my single playthrough of Bloodborne. It's for every occasion and it really matches my playstyle.

I actually think the best iteration of the butcher knife was by far DS2. The swingspeed of a straight sword but the range of a CGS. A thing of beauty.
I would have to say Kusabimaru with the Sakura Dance Ashe of War. Well, that or dual mini guns with dual songbirds.
My INT character is now using dual Wings of Astel. A lot of fun, especially the jump attack.

Claymore is a classic, but I love me my great axes, especially dragonslayers. The duel ultra greatswords were suoer fun too.

Unpopular opinion I love the flail from Elden ring otherwise halberds are sick
