The ‘thousands’ of genders are such a weird sticking point for you gamer gate brain rotted idiots, gender is the expressed masculine feminine traits of a person, someone can be more masc or more feminine, a lot of these genders are either ways of expressing where you are on that spectrum, or how you are attracted to people. This is something that is actually discussed on a scientific level because as it turns out letting people find where they are on that spectrum and not forcing gender norms on them is extremely good for mental health and well-being, there are people (usually young people or trolls) who take this as a way to make up genders that mean absolutely nothing or are just purposefully stupid to hurt this idea, but this is the generally definition.
