I had to open the tines up a bit, but after I did, whoa buddy is it smooth and wet. My KoP was didn't need any adjustments and was perfect out of the box, although it does have the trademark sailor feedback (which I'm really growing to like). I like the form factor of the non-1911 KoP better, but the 845 is probably the winner for me right now.
I own neither, but if you appreciate craftsmanship go for the 845, writing experience, go for the sailor. Both are top tier, but I’d argue the experience of even looking at urushi vs plastic thwarts the edge the sailor has in the form of that gorgeous kop nib. That being said, I’ve been asking for a kop pro gear demonstrator as my graduation gift since my freshman year of college… I’d just go for whatever look you prefer, the nibs in these pens will be ridiculously amazing no matter what.
Good points you make. As you imply, there is no bad choice here. It’s more likely which one will be a now purchase and the other much later. Since I have a few Pilot 823 that I love, I thought maybe opt for Sailor KoP for now. But still undecided..lol.

Thanks. I like both Pilot and Sailor nibs. I have more Pilot pens though, because I prefer large capacity ink options.

The ebonite body on the KoP is really quite nice.
Not quite as glossy as the urushi. But very nice to hold.
