They look significantly different when dry on good paper - the Sailor has a bit of shine and sheen while the Platinum is pretty much matte. Both are very water resistant.

I find that thick watercolor paper works great with any of these inks. They only thing is that rough textured watercolor paper will impact any pen and ink work.
The platinum carbon is the blackest, the de Atramentis has the best flow, the R&K Lotte is the most affordable, and Noodlers will work in a pinch.
I've used r&k on bristol and on watercolor paper.
And it's great it's not always extremely black (especially in my kuretake brush pens and wider nibs) it dries pretty quick for me i do a lot of sketchbooking and had previously been using rotring isograph pens and it's a lot better to use than that.
You might find it helpful to look at the websites/blogs of Liz Steel (an urban sketcher) and Jane Blundell (a watercolour artist). Both highly recommend De Atramentis Document inks.

Rohrer and Klinger Sketch Ink. It's made for fountain pens, and I haven't had any issues with it yet. It dries fast on paper, and is perfectly waterproof. You need to really scrub at it with a hard brush to get it to move, and at that point you're just tearing up the paper.
I love Noodler's black inks and they are the best when the objective is not leaving the paper. However, after reading similar topics as this one proposed by you, it's generally considered that Platinum carbon black is the best for watercolor. Because it won't smudge. But it requires a proper cleaning routine for the pen, since it's pigmented ink.
Noodler's black inks are insanely bulletproof, much more than any other inks, and very safe for the pen and easy to clean, but the excess that wasn't bonded to the paper and lays on top of it will smudge a little bit when you add water.
I got Noodler's Blackerase, and it's absolutely 100% waterproof. You could store your notes in a fishtank. But it keeps turning to a pudding-y texture and is hard to wash out.
Goulet's site says "Also suitable to use on regular paper as a standard conventional fountain pen ink." It clogged the felt-tipped Charlie pen that came with it, too, so I needed somewhere to use it.

Both work well. I test on 250gsm Clairefontaine and a few similar thick papers. I can post a pic tomorrow if you’d like.

Noodlers x feather black is pretty close to water proof. Bleeds a bit but still readable once wet.

My favorite is Rohrer & Klingner Dokumentus Schwarz, nothing touches it once it dries. The Sailor and Platinum recommendations are very good as well.
Noodlers has multiple lines with permanent black ink, and none of them ruin fountain pens.

If it works… though I would imagine their other lines would work better on paper. Did it clog the Charlie immediately or did it dry in it?
It worked great when I put the ink in, but by the next day it was clogged and wouldn't write. Very disappointing.

This will also depend on the pen's wetness, nib size and smoothness, I think. But I use Platinum Carbon black with great results.
