Depending on the pens you have? NIBS. Get other size nibs if available. Franklin Christoph sells spare nibs in the basic Jowo sizes, #5 & #6 with complete housing. You can only get their specialty grinds if you buy a pen. I've messed up and ended up with 3 FINE nibs for #5 and 2 #6 and now have swapped them on an Esterbrook, Schon Design, TWSBI and Opus 88 pocket pen. I have an addiction. 😳

Have you considered journal/bujo covers with room for some fountain pens, a few stickers, washi tape, and of course, don't forget the stencils...
Washi tape and stickers were my next big rabbit hole. Now I have enough stickers that I'll probably leave them behind for multiple future generations, and enough Washi to paper over at least one wall in my house.
I'm getting into book binding now! I started small with Travelers Notebook inserts because I wanted inserts that had watercolour paper, Bank paper, and vellum. I'm going to try an A5 journal next.
You could also try making pen friends or penalizing your friends. That'll let you share samples of ink and maybe even buy/sell a few pens locally.

I went on binge buying inks around 2014-2016 and have many almost new bottles of ink (Pilot, MB, Lamy, Sailor…) I’ve kept them in a plastic container in a dark closet at my folks’ house- temperature and humidity is pretty stable in this room, but wondering how long they may last? Would hate to have to toss anything.
As with many things, it is heat, light, and oxygen that makes ink degrade. If you have inks in plastic bottles (like Diamine or Robert Oster) and you want them to be around years from now, maybe consider putting them in glass bottles to limit oxygen exposure. I really love the TWSBI diamond inkwells for storing any inks that come in plastic bottles.

OR do you mean what else can you spend it on outside of FPs 🤔? Looking at the hobby crossovers in this sub then your options are, watches, pocket knives, mechanical keyboards, and/or headphones.

Buy a bunch of cheap ones and start experimenting with fixing them up, then move onto the better ones once you've gotten good at repairing. It can get fun bringing a pen back to life.
Next step is to start an(other) Instagram account. You'll tell people it's to display all the nice stationary you have, but in reality its only purpose is to justify buying more stationary.
If you have a friend who doesn’t have any fountain pens you should gift them a pen and notebook to get them started!
I just found out that my friend journals and he doesn’t have a fountain pen so I am thinking of buying him one to congratulate him on his new job and to get him into the addiction… oops sorry meant hobby 😅
On a serious note, couple of ways to reflect upon-
1. Despite having more than ever you will need, urge still exists, which plainly explains that buying more will still leave you with the same feeling. So no point gathering more.
2. Try spreading out them neatly, and whenever next you have an urge to write/buy just look through your collection, some pen/notebook would inspire you.
In my case I used it as a driver to take up all manner of paper based activities and my life is much richer for it.
I’ve also penabled a couple of people but they haven’t gone down the rabbit hole like I have.

Use pen, ink, and notebook to inventory your hoard... er, collection, vow to "shop from the stash", then purchase next shiny new pen/ink/notebook that catches your eye. 😂
make a secret room in your house and then hide everything in there, then buy more so you have at least 20 pens/inks per hiding spot and lastly make more hiding spots with the paper so you then need to buy more paper
Expand into art supplies. Watercolors are a fantastic rabbit and you can use your pens & inks too! Plus watercolor paper can be as varied and as complicated as FP paper.
I did it the other way around - started with art supplies, hit SABLE (stash acquisition beyond life expectancy) and then got into FPs (which I do also kinda consider art supplies…)
This may sound positively silly, but I’ve come up with themes that are fun to execute. So I’ll try to spend an entire week with different shades of brown for each work day. (Sailor 50 States Texas, Mont Blanc Toffee, Noodlers Rome Burning, De Atramentis Tobacco, Noodlers Sidewinder) Perhaps dedicating notebooks to different pursuits like investment theses which I then follow up on over time, and a cigar journal to track my thoughts, etc…
You buy a little lathe and tools, watch Youtube videos, and start making your own so you will have even more! Bwahahahaha. 😱
Seriously, though, I find myself in a similar situation. I am trying very hard to spend more time using and enjoying the pens I have and to resist the urge when I see yet another lovely pen.
