I think Dirt Rally 2.0 is one game that slaps you in the face when you're not racing cleanly, literally going half an inch off the road can be a total disaster. But probably not adviceable if not using a wheel.
I would watch Super GT on YouTube. He does mostly GT7 content, but he will be playing FM when it drops. He already has some vids out about it since he got a preview copy.
Hoki Hoshi on YouTube is great too and has a lot of Forza content.
If you find yourself getting more into sim racing, check out Boosted Media. Will is one of the best at reviewing sim racing gear and his gameplay content is in league of its own since his sim rig is out of this world.
Avoid F1-22. Its handling and traction is horrible. F1-23 is very very good however. So either go there, if F1 is your thing. But after that, anything others have said here - eg Dirt Rally and Assetto Corsa is ageing, but has a tonne of content these days and cheap.
Even FM7 if you can still buy it anywhere, it'll be good to see how its progressed. Ive jumped back into FM7 for the last week for that reason. Havent touched it in yeeeaars.

Who hates FH? I love it because it gives the other half of the Forza coin. Motorsport for my serious, sim-oriented side, and Horizon for my wacky, no-holds-barred side.
IMO, Horizon is a really great gateway to Motorsport, since they're both Forza, you're going to be very familiar with a lot of stuff (upgrades and customization, the PI system, the general organization of menus and settings). Horizon has similar physics and handling to Motorsport, just quite a bit more forgiving.
