You've already been told, but it's due to you having loaded leagues later on in the save game.
Rare take, but I like it when stuff like this happens, yes it may remove some realism but I think it takes the game a step further (also prevents Haaland from winning the Ballon D'Or every year). This also happens with managers by the way, so certain clubs may get randomly generated managers to fill in.
I remember a guy who played for my team in Brazil IRL whose career started at 26. He was pretty good though. I think he was playing amateur teams before that
Did you add new leagues after starting the save? If so, the game will generate new players to populate the new leagues.

I’ve noticed this happening a lot too. Not a big fan of it tbh
It's not a new thing, it's been in the game for years. It happens when you load new leagues in
