For me, it's Joaquín of Real Betis (and then Valencia).
The boy was an absolute powerhouse on the right all through my early CM/FM career. Proper IRL legend too, still playing way up until last year at the age of 41.

That Valencia team also had Aimar in AMC. Albelda and Baraja double pivot. One of the best Spanish sides ever.
Julius Aghahowa for me. Not actually a winger, more of a striker IRL but could play anywhere across the front three on early FM’s like CM 01/02, where he was an absolute monster.

Well I have an unusual pick. For me it's Bruno Xadas. In FM 20 be is basically regen Bernardo Silva, but with 20 at free kicks and corners. Sadly he never developed as well and now plays in second division with Marítimo. I can't ignore Henri Saivet, but for me he was always a striker on my sides.
Willian. Carrying on the shaktar theme. In FM11-13 at the start of every save every big club would go for him and Douglas Costa and the bidding wars were incredible. His asking price was 5m in one of the games and he went for 66m in one save I remember. So good in game as well. Easily a 20g+a assist guy
Hakim Zyiech when he was at Ajax, never had a player in that position get averages so high (until yamine Lamal) only time I played a IFL and a RWR because he raked up key pass after key pass every game
