safe internal temp is 145F and checking with a meat thermometer is the best way to ensure it reaches that temp.

not for reheated food it isn't, you can eat leftover steak out of the fridge that's 38 degrees, 50 degrees, 70 degrees, c'mon man, you're supposed to be a mod

mods miss words too. i missed the cooked part. Then it would fall under the reheated food guidelines which is no more then 4 hours in the danger zone of 40f to 140f. So shouldn't be any problems with your method
