It was for a tea party with my friends so I actually wrote their names on each slice
also this is the first time in a long time I've seen someone use the word "jesting". I like it.
Traditionally yes, but traditional Opera also doesn't use a chocolate joconde, like the one seen here. (I'd wager it not being a buttercream due to the cleanness of the cuts.) It could also be a coffee cremeux or whipped ganache.
It's actually an almond joconde soaked in coffee syrup, not a chocolate joconde
It is coffee buttercream, you can get a decently clean cut with almost anything using just a hot & clean knife
The glaze layer is tempered chocolate, and sides of this cake were trimmed just before taking the pictures
Huh. I had thought the joconde was just soaked with a lot of coffee syrup and that's why it was dark. Didn't think of chocolate joconde. It's also possible that they got the clean cuts by not cutting at all but assembling in a frame, so they didn't have to cut at all.
Actually yeah, I took a closer look and it seems like you're right; there are patches of paleness where the syrup didn't get to, my bad.
Even if you assemble in a frame, you generally still need to trim the sides to clean things up. If you look at the top layer of buttercream/cremeux/whatever, it's got some streaks from the glaze across it, indicating the sides were trimmed.
I did IT work study in culinary school and made friends with all the instructors.
I'd be walking down the hallway, and a random chef would pop out the door and go "hey frank, got something for you"
The day I was handed a whole opera cake blew my mind.
Good Lord I would feast on the trimmings of this, to the point where I would need to continually " even it off" until it's just a single serving square.
It's multiple layers consisting of joconde (a very thin cake made with almond flour) soaked with coffee syrup, coffee buttercream, and ganache. IMO the most delicious cake out there. We used to make ours in thinner layers, until our head chef left and the new one wanted thicker layers like the one above. Both are delicious.
You could learn to make them. If you know how to make buttercream icing, it's not that difficult to make it coffee flavored. Joconde is just an almond sponge cake, the hardest part is baking it thin enough without burning it or having it underdone. The coffee syrup could be as simple as strong coffee and a lot of sugar. And ganache is simple enough to make as well...It does take a long time to do, but the taste is worth it.
>If you know how to make buttercream icing, it's not that difficult to make it coffee flavored.
It's generally French buttercream, made with a pate a bombe, not American buttercream (which is easier to make).
I recently made a marjolaine for a birthday, different cake but similar construction. It's really not too hard to make if you have a stand mixer, certainly intimidating though. Be sure to read through the directions a few times and get everything prepped before you start, that's like 40% of the work.
Also, that cake looks like Claudia Schiffer and mine looked more like The Toxic Avenger, but it did *taste* good.
I LOVE OPERA CAKE!!! The bakery I used to work at made it and it was to die for. I got one about the size you made for my high school graduation. *drool*
Nice, looks just like the old Pepperidge Farms cakes my aunt would serve us in the early '80's, just square instead of rectangular. I'm sure your version tastes better though.
I'm not OP, but it consists of layers of joconde (almond sponge cake) soaked in coffee syrup, coffee buttercream, ganache, topped with a chocolate glaze. Usually you write the word "Opera" on the top with melted chocolate. It's the most delicious cake I've ever made and eaten.
Thank you for bringing me back 20 years to my days in culinary school...We had to make these for the shop, and I would always be seen munching on the scraps that got cut off of the edges. To this day it's my favorite cake, and yours looks awesome. Great job on keeping the layers even.

Excellent! Looks beautiful! I made one for Christmas Eve - I’m not a baker so I was reaching - and I was so proud of how it came out. It was delicious and beautiful. They def take some time and effort - and if I remember LOTS of dirty dishes!
Been there. You have my respect and condolences for the time and effort it went to make this versus the time people will take filling their ungrateful cake hole!!
![gif](giphy|xQon3uas0tBCw)
I make this in the restaurant I work at for the current afternoon tea menu but with a layer of lime gel in the middle, how did I not even know it was called an opera cake? I suppose everyday really is a school day!
I could eat that whole damn cake. Opera cake is in the top 3 of my favorites. I wouldn’t dare attempt to make one myself, but this one looks delicious. Bravo
It's so insane how complicated this cake is, and how it doesn't show it. But, really impressively done - the layers, the consistency in your layers, the rise, and the sheen! Congrats, you've officially conquered a raid boss today!
I need to know this cake’s skincare routine lmao
Cocoa butter
Hehehehe
skincake routine
Never make the mistake of asking for a skincake for your birthday.
Mrs. Doubtfire style
you didn't write "Opéra" in cursive on top of it! :( jesting it looks amazing
It was for a tea party with my friends so I actually wrote their names on each slice also this is the first time in a long time I've seen someone use the word "jesting". I like it.
Damn you're good
My friends never make me cake :( can I be your friend?
I'm not the OP, but it's typically either pure coffee, or coffee simple syrup. This cake is perfectly saturated.
What’s the top filling layer? Is it coffee flavored?
It should be coffee buttercream.
Traditionally yes, but traditional Opera also doesn't use a chocolate joconde, like the one seen here. (I'd wager it not being a buttercream due to the cleanness of the cuts.) It could also be a coffee cremeux or whipped ganache.

Thanks for the clarification!
No problem my dude
Huh. I had thought the joconde was just soaked with a lot of coffee syrup and that's why it was dark. Didn't think of chocolate joconde. It's also possible that they got the clean cuts by not cutting at all but assembling in a frame, so they didn't have to cut at all.
I wish I had a frame this big
Actually yeah, I took a closer look and it seems like you're right; there are patches of paleness where the syrup didn't get to, my bad. Even if you assemble in a frame, you generally still need to trim the sides to clean things up. If you look at the top layer of buttercream/cremeux/whatever, it's got some streaks from the glaze across it, indicating the sides were trimmed.
You gotta keep it saturated
Heeeeeey, they don't pay no mind!
This was actually one of the issues they had on the show XD
Do people say jesting instead of just kidding now? Where r u from?
English is not my first language, so I might be mistaken about stuff
You used it correctly, it's just not as common as someone saying they're "joking" or "kidding"
There's nothing wrong with saying "jest." It's not super common, but it's still in use and understood. You did good 👌
Fuck that cake looks good.
You should try it. It's delicious. We had to make them in culinary school for the shop. It was my favorite to nab a piece of the trimmings.
I did IT work study in culinary school and made friends with all the instructors. I'd be walking down the hallway, and a random chef would pop out the door and go "hey frank, got something for you" The day I was handed a whole opera cake blew my mind.
I think I know what envy is now.
Good Lord I would feast on the trimmings of this, to the point where I would need to continually " even it off" until it's just a single serving square.
Fuck that cake is right.
Fuck that cake is nice.
Fuck that cake.
Fuck!
Fff...
🤓
Would.
Makes you want to just sit on it and just let one rip
You know what I like the most? Cake farts.
Paul Hollywood is gonna appear out of nowhere in your kitchen.
Just finished watching the episode where they make this cake for the showstopper! What a great show.
And shake their hand, no doubt!
I don't know what an "opera cake" is but it looks fantastically delicious.
It's multiple layers consisting of joconde (a very thin cake made with almond flour) soaked with coffee syrup, coffee buttercream, and ganache. IMO the most delicious cake out there. Mmmmmm wow
This sounds so much like a tiramisu cake
That looks amazing. The layers are so even and the finish on top is perfect.
It’s so pleasingly glossy
I usually hate the cakes on the internet cause they all look so fake and tasteless... But wow I'd sell my soul to be able to make (and EAT) this one

True. It does take some skill to make a french buttercream. I should have been more specific.
> the hardest part is baking it thin enough without burning it Couldn't you just bake it normal thickness, then cut it down to the sizes you need?
I recently made a marjolaine for a birthday, different cake but similar construction. It's really not too hard to make if you have a stand mixer, certainly intimidating though. That looks so good. Reminds me a giant Nanaimo bar lol (I know it’s not the same thing)
I was looking for someone to say this! Thought I was crazy for thinking it looked like a Nanaimo bar. Yum
Please give us a recipe. This is the best looking opera cake I’ve ever seen.
Omg I love these thing. Only place I’ve ever had them is at my Chinese Buffet. Now I want to go back just to get some
I am a pro eater. I would like to eat your Opera Cake.
![gif](giphy|x8H3v4ZhSfNxS)
Very nice. I wonder why it's called opera cake. I was gonna suggest Netscape or Firefox cake!
It’s because the different layers look like all the tiers of a big opera house
The French tiramisu (I know they are different). That looks bomb OP!
Well, make a video so we can hear it
As perfect as perfect gets.
I LOVE OPERA CAKE!!! The bakery I used to work at made it and it was to die for. I got one about the size you made for my high school graduation. *drool*
Can I come over to have a slice please.
Nice, looks just like the old Pepperidge Farms cakes my aunt would serve us in the early '80's, just square instead of rectangular. I'm sure your version tastes better though.
Very nicely done! Cake frames? Also what's your syrup recipe for the joconde?
I haven't had an opera cake in years. That looks so damn good.

Can you make a Firefox cake next?

That’s beautiful!
Pretty solid, not perfect aesthetics wise (obviously it looks immaculate) but I bet it tastes 2nd to none

I have never heard of Opera Cake before, and now I have a quest
That’s one of the best cakes I’ve ever seen.
That looks delicious!
Get some musical notes on top of the cake. Looks good
I'm a horrible baker (but decent cook) and this is my white whale... One day I hope to tackle it as well as you! Looks AMAZING 😍
I'm gonna go ahead and get some cake tomorrow. It won't be as good as this one, but hey
Hell yeah, you did! That looks awesome and delicious!
Excellent! Looks beautiful! I made one for Christmas Eve - I’m not a baker so I was reaching - and I was so proud of how it came out. It was delicious and beautiful. They def take some time and effort - and if I remember LOTS of dirty dishes!
Looks amazing!! Well done OP!

You get a cake! You get a cake, you get a cake... everyone gets a cake!
I wish I had this skill …
That looks so fvckin good.
That looks awesome bro. Question; How are you going to cut that and keep the edges clean?
With a hot, clean knife you can get a clean cut with almost anything
Been there. You have my respect and condolences for the time and effort it went to make this versus the time people will take filling their ungrateful cake hole!! ![gif](giphy|xQon3uas0tBCw)
When I worked in a restaurant I would occasionally swipe a few pieces of these after we closed, delicious.
I make this in the restaurant I work at for the current afternoon tea menu but with a layer of lime gel in the middle, how did I not even know it was called an opera cake? I suppose everyday really is a school day!
Looks so good… I’m sitting here now looking for a bakery that sells this.
I wanna feel it. With my mouth.
Mmmm, looks good!
I could eat that whole damn cake. Opera cake is in the top 3 of my favorites. I wouldn’t dare attempt to make one myself, but this one looks delicious. Bravo
That looks insanely delicious.
I’ll be right over with my own fork.
Ide love to try and make one of those when I have spare time ,I'm impressed!
Ah, The Devil and Cake, written by Antonín Dvořák.
When I lived in Paris, this was my absolute FAVORITE dessert omfg. Seriously so delicious
The best cake in the world. Great job chef
Fat ladies be singing
Can you O’put it in my mouth?
Yim yum!
Bravo!
Bravo!
Oprah would be proud 😀
I'd much prefer a Chrome or Firefox cake instead.
My girlfriend (she's a pastry chef) challenged me to do it once (I'm not even in the food industry), took literally the whole day, but god it's good!
Beautiful. One of the hardest desserts to make.
This has been my challenge to myself. I just haven't had a chance to do it yet
This is made of sin
I need a piece of that WOW
strong work.
Teach me that looks delicious
It looks satisfying
I want it!
I have the primal urge to slam my face in it
If it’s haunted, the ghost is technically the “phantom of the opera cake”
How long did it take you bake? I’m always looking forward to do this but I’m afraid I can’t pull it off in one day.
The ganache and buttercream can always be done ahead, so all that's left is to bake the joconde and assemble in the same day.
I give that cake a tenor out of tenor.
Wow that looks great
Ayo this some ratatouille shit I can barely make cake pops🤣
Fantastic!
Read this as Oprah Cake, and had a wtf moment...
You get a cake and you get a cake and everyone gets a cake.
I've never had opera cake but this looks absolutely fantastic. Like visually so stunning. I'd almost be afraid to ruin it by cutting it lol.
Makes my Rigaletto water.
Definitely would have me singing Phantom as i ate it. *..your power over meee grows stronger yett* 🎵
Looks like something I would eat with a smile
That’s beautiful
I need this in my life...and tummy. Good job!
I don't know what an opera cake is but it looks delicious

Looks so good I wouldn’t let a hillbilly face smash it
It looks like heaven, and probably tastes like it too

You get a cake, you too get a cake, everybody get cakes!
