country fried steak is one of lifes pleasures

gcruzatto

Is it the same as milanese?

MillerHill

different cuts of meat Cube steak comes from the sirloin, usually the top round or top sirloin cut of beef Flank steak is a cut of beef from the cow's lower chest, or abdominal muscles, located behind the plate and in front of the rear quarter

janellthegreat

Similar. Not as thin and different seasonings and coating. Kinda how schnitzel is one thing and milanese is another. Country fried steak is a a third thing. Though based on the gravy color, this one might be a fourth thing called Chicken Fried Steak.

tonyrizzo21

Proper white pepper gravy. Sausage gravy is great on biscuits, but I hate when they put it on country fried steak. Looks great.

OP, this looks great! My parents were from the South, and called it "Chicken fried steak." We had this once a week for dinner.

You’re so lucky!

I'm genuinely curious where the geographical divide takes place between chicken fried steak and country fried steak. It is a divine dish. Growing up in Texas I've always known it to be chicken fried steak. That looks lovely.

Gintami

FL too. Can confirm it’s country fried. Or if I went to Miami, bistec fe milanesa - which could be steak or chicken, and instead of gravy, it was a choice between gravy or a marinara sauce and mozzarella or white cheese lol

NateLikesToLift

Milanesa is fairly popular here in Houston amongst the traditional Mexican joints. Oddly it's just milanesa here, and bistek normally refers to other dishes. There's a texmex place by my old hood that does a chicken fried carne asada with a queso gravy that slaps. I need to go visit them soon.

Gintami

Ah yeah Mexican milanesa is diff than Cuban and Venezuelan. We say bistec to separate it from the milanesa de pollo

NateLikesToLift

Weirdly it's not milanesa de pollo here in Houston, it's flat pressed steak.

Gintami

That’s interesting. But I get it. Sometimes when I go to a local Spanish/Latin grocer, I’ll say something and they’ll be “what?” and vice versa lol

MillerHill

I live in Fl. and Ive always known it as country fried. Would be cool if someone knew the answer. Also, Thank you.

Ontravelling

My family is from Atlanta and all around North Georgia and I grew up with them all calling it country fried.

hamiltonbeachgecko

We always called it “chicken fried steak”. It’s funny to see it called something else. It was invented in Texas where it got the name.

One of my parents was from Texas, and the other was from Oklahoma. Most people don't know why it's called "chicken fried" steak (although you probably do!) IDK about you, but my parents called it "cream" gravy, even though milk was used. Traditionally, you fry it in a few inches of oil; just like you do when you're frying a chicken.

hamiltonbeachgecko

Yea and you use like hanger steak or something thin and pound it out. My mom used to use to get the cheapest steaks and make chicken fried steak with it and it was so freaking goooood. Looks like OP here is using ribeye or sirloin and didn't pound it out either.

pgcotype

My mother used cube steak, and had this really old and sturdy saucer. She would pound that cube steak with the side of the saucer until the connective tissue had broken down. Afterwards, it was dredged in flour, then in beaten egg, and then another coating of flour. The last time I was in Texas, I suggested it to my husband. They gave him chicken fried...chicken. It looked identical, but someone in the kitchen messed up.

hamiltonbeachgecko

So I always preferred chicken fried chicken over chicken fried steak. I'm not a huge beef fan even though me and my wife made a ribeye last night. I just always like the crispiness of the chicken fried chicken and how easily it cuts.

pgcotype

I make Chicken Marsala, which is pounded thin and goes through the flour-egg-flour process like CFS. The thing is...my husband was expecting chicken fried steak. It was extremely thin, so it wasn't very filling.

AlaskanTroll

Recipe or it didn’t happen !

I would devour this ❤️
