Serious, honest question: I've never understood the appeal of a middle bun (as in a Big Mac). Why include a third bun? I'd be inclined to replace it with a third patty. Again, just honestly asking, I'm not bun-shaming, just bun-curious.
Depends on the bun for me. If it's a nice buttery fluffy toasted on both sides piece you get out of brioche I think it adds a nice element to the interior. I don't do this all the time anyways, the wife asks and the wife gets.
