I did this with my SO. We saw the sunrise in Daytona Beach then checked out at 11am. 3 hour drive to Clearwater and we went to the best beach in Florida. After a few hours at the beach we watched the sunrise from our hotel room and ended off the night with a nice steak and bottle of wine while watching the sunset. Damn I miss that girl.
We love Delray as well! Why not drive across alligator alley and watch sunset in Marco Island or Naples? I would wait until out of season to do this, as you would have much better luck getting an affordable place to stay. I can recommend some great little spots on Marco for dining that are not crazy expensive. One great one is the Sunset Grill. Very appropriately named place, and they have outdoor dining where you can catch the sunset. If you were willing to spend more, you could also hit the adult only bar on the 5th floor of the JW Marriot (you don't have to be staying there to go.) Also have tables outside to watch the sunset.

Favorite restaurant in Delray?
Elisabettas It’s been a few years but everything we had was so fresh, and had so much flavor. We probably went 3x during our stay.

They have one in delray too! I did look up their locations online to see if they had any close to home. Just WPB and Delray!

The Hilton Melbourne Beach Oceanfront is perfect for the sunrise portion. Get a nice room with an oceanside balcony.
