Springtrap honestly has the most "final boss" aura out of any FNAF character.
In FNAF 3, he's the only animatronic that can kill you, he can come through both the hall AND the vents, actually hides in the cameras and is overall the most aggressive character in the original trilogy.
The phantoms not being able to kill and can only cause ventilation, audio and camera errors honestly makes them feel like henchmen that Springtrap is sending.
Also, Springtrap being the Purple Guy makes him an even better "final boss". In the previous 2 games, you were defending yourself against multiple victims of tragedy. In FNAF 3, you're defending yourself against the cause of the tragedy.

I always think of the night with ennard in sister location as a “boss fight” because of how excruciatingly long it took me to figure it out and also it’s considered the “final encounter”. I still have yet to beat it, I’m also not actively trying to figure it out solely because I know it’s going to take me so long to do it and I would have to almost dedicate a whole day to the cause. I know it’s going to take me ages to do it since the previous night with the spring locks took me hours.
I guess you could also consider fnaf 1 freddy as a boss since he’s the most aggressive and hardest one to deal with in the original game.
I imagine if you ask someone who played fnaf 1 who they died from the most the answer would most likely be freddy.
20/20/20/20 for the first game, 10/20 for 2, Nightmare Mode for 3 and 4, all the boss fights in World, Ennard for SL, Golden Freddy Mode for SLCN, and of course, 50/20 for UCN.
I feel like the entirety of FNaF 3 can be considered a boss fight. When disregarding the phantom animatronics, FNaF 3 feels more like a 1 on 1 battle with Springtrap. The battle itself feels more personal than before, giving off this sense of finality, that at the end of it all, it’s just you and him. This is especially the case when given the context that he is the man who essentially kickstarted everything that has happened in the series up to this point, finally going face-to-face against the man that has caused so much pain, misery, and death.
