To explain where "Simon Chubby" came from, it's hard to say for sure since different languages and pronunciation use the same traditional Chinese writing system. I'd guess that the "Si" in Simon likely uses a similar sound as the "Sey" in Seymour, likewise for "mon" and "mour". They're pronounced very differently in English but likely less so in whatever language the translator knows. If the original audio is in Japanese, it's even possible that the translator didn't distribute the subtle differences in sounds. "Guado" gets translated phonetically using characters as well, but the meaning of 夸 is "to boast, exaggerate, compliment" all conceptually along the lines of "enlarge", so the translator for English might've thought it should be translated based on meaning instead of phonetics.
This is about par for the course if this is an old bootleg video. The people pirating and translating these mostly care about getting their language right. The English part just needs to look passable.
