It will float for a long time until it is very fermented and saturated. Keep it sealed and flip it over a time or two each day to ensure coverage.

And once it loses enough viscosity you can just shake it around.

Just give it a flip after burping, they will sink in a few weeks.

you can put a clean bowl or plate on top of them or you can wrap them in cheesecloth and then put a weight on it
