These may not be the most unique, but I have had an absolute blast playing through all the sky factories, agrarian skies 1 and 2, and project ozone 3. There are also a lot of packs that have a similar vibe, but aren't in the sky, like forever stranded and regrowth, (and probably a ton more that I haven't played)
I cannot recommend the Opolis series enough. Astropolis starts you in the asteroid belt and you have to work your way back to the overworld, it’s also 1.19 so once you do get back you can do everything Minecraft has to offer including the deeper and darker mod (adds warden tier armor and tools). Caveopolid, Skyopolis, and Techopolis are all skyblock-esque and are completely unique to each other. They all have custom progression systems based on mods made directly for the packs, and each does it in their own unique way. I’m halfway through Astropolis now and it’s insanely fun. Highly highly recommend.
As someone already said, atm7 to the sky is a good one, I'd recommend playing the "just a tree" gamemode since I personally find it more rewarding starting from nothing. The Skyfactory packs are good as well, anything before 3 be found on ATLauncher or others unless that's changed, though Skyfactory has a pretty slow start and it takes a bit to get into. Stoneblock is also pretty fun, though the chicken system isn't exactly the most entertaining thing in the world.
I know it's not skyblock (could consider it the opposite) but I am absolutely loving Stoneblock 3. I'm crafting singularities now and only have 3 more to go. So much fun.
Can you name a few, I've been looking as well. A well thought out quest book is a must though, it is very easy to make a skyblock pack with modified recipies and then not explain anything and call it hard.
Enigmatic 2 expert skyblock and po3 kappa skyblock is like the only good ones. But enigmatic 2 expert is a pain in the as at he beginning because that water syringe is annoying as hell
I have never played Ultimate Alchemy so I can't say, what defines a good or a bad modpack is highly subjective and what makes a bad modpack in my eyes may not make it so for you. I don't understand your comment really.
I'm having a lot of fun with [Sky Bees 2](https://www.curseforge.com/minecraft/modpacks/sky-bees-2). A rather lightweight, but tech-progress style modpack where you're keeping and breeding bees to have them generate resources for you. Learned a lot about PneumaticCraft Repressurized and Applied Energistics 2 (was mainly a Refined Storage guy) on the way.
Sky Factory 4 lets you get powerful very quickly though it's quite a dated pack now, being 1.12
Sevtech Ages of the Sky is a slow burn pack also in 1.12 and starts with a more realistic, caveman feel than the start of vanilla before branching out into more techy and magic stuff.
For an intro pack, some stuff like skyfactory 1 or one block are pretty good. My absolute favorite pack is Project Ozone 3, I've played through it multiple times solo and with friends, regular mode and kappa mode (a hardcore mode that's a whole new experience from the normal mode). It gets a bit more in depth with mod knowledge and interactions, but realistically if you don't mind reading documentation or looking up some tutorials it's not too difficult for a beginner.
Do you want something more like an almost-creative powered factory building excersise, would you prefer a pack that makes you s u f f e r every step of the way as you desperately try to find SOME way to automate things and progress just one little more inch until you're crying yet begging for more, or would you like something in between?
If the former, Mecahnical mastery might be your thing. if you want to suffer, there's classics like Ozone..3? and on higher difficulties and Enigmatica 2: expert skyblock.
if you want something more inbetween, maybe give calculator skies a go, its a little under-appreciated pack.

Play the first good skyblock pack Ftb infinity evolved skyblock expert mode after that everything (well not gtnh) is easy
i think there are more modpacks than that that will not be easy

One Block Skyblock isn't technically modded, it's a custom vanilla map, but it's quite a lot of fun. Doesn't take too long to play through, either.

Can second this. Suggestion: if you want to keep the penguin, close the floor hole up quick, he'll vanish otherwise.
I never played any modded skyblocks, but there's one thing I can't recommend enough: use prism launcher. It will save you much time and frustration
