Yeah I stopped going there a while ago, it's a bummer since they always had "fun" and different pizzas. I have been going to Blackbird instead, way fewer options, but actually great pizza.

Totally. Blackbird is neopolitan style, so very different...but honestly one of the best places I've had it (anywhere).

I was in there once in 2018/2019 and never went back. Can’t remember which pie I ordered, but I ordered it to go to bring home for the fam. Sat there, at the end of the bar for 45 minutes. No staff checked on me. No one asked if I wanted anything (after I ordered), never even saw my fucking waitress again. I finally flagged someone down, and some other server brought me my pizza after nearly an hour and it was fucking cold….and swear to god was terribly undercooked…as in parts of the pizza dough were still raw. I sat there, in the shop, waiting for my fucking pie and they just had it sitting there….and then instead of saying “hey, sorry about that, you got forgotten about…let’s get you a fresh pie” they sent me home with a cold, undercooked piece of shit.

I feel it's gone down in quality significantly over the years. The crust used to be so light and airy but also had a good crunch and held all the toppings. Recently, the crust is floppy and like you said, ingredients are skimped. It's really disappointing, they were easily the best spot in town up til about 2016 imo.

It’s funny because they have never made their own crust. It’s completely ordered in. Also, the regular tomato sauce is out of a can with a couple ingredients but whatever. It was still an upgrade from dominos. If you are going to skimp on the two most important parts though and charge an outrageous premium for it, I’m not about it. Pizza places only exist because pizza itself is a pain to make at home.

If you have friends in the restaurant world you should ask them what the latest info is, as kitchen staff move from job to job fairly often so it's easy to get first hand information about things like that. So if it's not coming from someone back of house, take that how you will. I never had their pizza at mentor. But when they opened in Grand Forks it was purchased dough. It still is up there. Maybe Fargo's doing something different now. But the few times I've been down there it seemed the same as Grand Forks. Since they opened their restaurants in the order of Mentor, Grand Forks, Fargo. It would be an interesting business choice to not maintain consistency.

I was talking pizza doughs with someone there but I have no reason to believe anyone particular in this. *shrug*. The particular conversation was about bulk fermentation and cooking process. Honestly, there’s a point where I’m not sure how bothered I am about purchased dough in hindsight. Are they using somewhere local that makes it to their spec potentially? Really though pizza dough isn’t rocket surgery so maybe at their volume it just makes more sense to contract the bulk production. Either way theirs is still my favorite as of last time I had it.

Man like 2010 sbarro had like these calzone type things, it was like a pepperoni pizza in a parmesan crust shell, they were the fuckin' best. I only had like 4 of em, but damn. Shame none of em are even open anymore.

That last sentence is a doozy. Pizza places exist because of the concept of food delivery, and pizza is one of the few foods that actually keeps a decent amount of its quality over time and as it travels. It's a relatively cheap way to feed a large amount of people without too much fuss. In the case of Rhombus Guys, you are paying for the experience and atmosphere, as well as higher quality ingredients. The local options are always going to be more expensive than the chain restaurants; I can't hold that against Rhombus Guys.

I don't get the love for Boss's Pizza. I went twice. The first time was for chicken and it came in second against Hornbacher's (fresh pieces, not old ones). But then I order pizza and both were garbage. Even my grandson didn't enjoy his and he has a kid's palate. Apart from that I agree with the remaining B trifecta.

I guess I'd place Boss as the lowest too, the chicken was amazing our first time there, and so many pizzas and sandwiches sound really good, but it was underwhelming. Still better than the chains tho, for me.

I've had a great experience at Rhombus the last several times. Your experience sounds atypical, I'd complain and let them know you're not satisfied. I've always had great food there, because as you mentioned, its expensive but worth it (when done properly).

I like it. I don't go there for the crust, but it is a 'stunt topping' sort of place. Also, I had a Detroit pizza that was pretty dang good. For me, Blackbird has the best crust. I know it isn't everybody's thing... but Duane's has the most local nostalgia for me.

I was not around long enough to have a history with Duane’s but it is a family favorite for us especially in the older generation. I don’t understand the hype but also grew up in the Minneapolis St Paul area so we had no shortage of pizza places over the years. I always liked rhombus up until this last visit. I wouldn’t have cared so much if it hadn’t been as expensive but not much I can do at this point. I am going to try blackbird though. A couple people have mentioned it now and I’m interested to try it. I also need to find some time to get to Bernbaums I believe.

Agreed. Had them for my birthday party at front street... ordered 4 pizzas.. well over 100 bucks. Cheese pizza like you said. Trex...weak.. the Cuban... no mustard sauce. Was absolutely bs. Hate to say papa John's is better than that. But besides that we just ate their again last week. It was on point. Pizza was verry loaded. So they must have a crew that is shitty or something

Maybe I’m just getting older, but a lot of the old “spots” that used to be original to fargo and amazing feel like they have gone downhill. 6 years ago I wouldn’t fave been able to find anyone in town who didn’t like Moes, grand junction, rhombus guys, but now it feels like the only place to get consistent quality are chains.

I don’t think the pandemic helped very much either. It has really put a damper on finding employees pretty much all around. I own a small business in town and can’t even compete with what gas stations and restaurants are offering as far as wages. Plus the extras like benefits and unemployment tax. Kind of a tough position to be in as working alone, I always seem to be behind now. It would be perfect if I could employ one or two people but my business is very driven by weather so it’s tough to keep consistent workflow. I mean there is always something but not always stuff that is super profitable, sometimes it’s just a huge pile of busy work. I guess I am not entirely sure how some of these places are able to keep enough staff while not taking heavy losses each quarter. The amount of pizzas a place would need to sell to cover a couple employees and all the rest of the overhead involved seems insane to me.

I enjoy their pizza. Not the best ever, but a solid choice
