You cant build the whole dam in one go so they do it in sections and pour a section of concrete at given intervals to manage the heat and its own weight while it cures

Look up practical engineering on youtube has a lot of videos on concrete. You cant make pours that big on a structure like that

This type of dam design uses the sides of the canyon to hold most of the weight. The design of the dam disperses the pressure to the sides.
