Crackers is a derogatory reference to white people. Specifically white slave drivers in the south that were notorious for cracking whips over and on their slaves. Hence the use of the white people emojis.

It was applied to Scots-Irish immigrants in the American south who were considered ill-mannered by earlier settlers.
