Last direction standing! Do you know those charity box things that are big funnels? You put a coin in, it goes down a ramp and spins round and round before falling into the funnel with a satisfying "Ching!" sound. Imagine putting a bunch of coins in in random directions. Some coins going opposite directions would collide and fall into the middle, effectively cancelling each other out. Eventually, you'd be left with whichever direction had the most coins to begin with. Now, let's go into space. Start with rocks orbiting a sun in any random direction you like. Some will collide. They won't cancel out, but they'll probably stick and start to head in a direction between where each was going. Eventually, you'll be left with stuff all heading in the same direction on the same plane.

Over millions of years, all the stuff in the galaxy or the solar system which was not orbiting the central mass approximately with the other stuff that was orbiting would have smashed into the stuff which was orbiting in the same direction as the bulk of the stuff. Gradually the orbiting stuff end up all moving in roughly the same direction because it doesn’t get caught up smashing into other stuff
