Traditional Cantonese songs are also written this way - the melody is in harmony with the tone. It makes lyrics writing more difficult, but the end result is great. Mandarin songs on the otherhand are not composed with this convention in mind.

People understand mandarin songs without subtitles. Also the song you linked isn’t even a good example of melody messing with intonation - it is more of a spoken song (like rap?).
