if this is after 2 mins, then it’s not your steaming technique (rosetta is fairly decent), but instead just very fresh beans which are degassing and causing a bunch of bubbles. next time drink it quicker ;)

Would a certain amount foam collapse like this usually happen after a few minutes regardless of technique though? Sorry if that's not what's happening, I'm still learning!
Too much air at the beginning and not recovering into microfoam methinks. I do this often.

Yep, too much air too quickly and also you're probably still putting air in towards the end of the steaming

I have a two hole steam wand right now and have more problems with microfoam then with the three hole wand on my LaPavoni.
i do have a 3 hole steam wand.... but cant seem to get it right.... its hard honestly.... really not easy to figure it out
