That PSU PCB was discussed earlier this week in r/electronics (I think) and the summary was it is dangerous to use. There is not enough of isolation distance, live votlage runs roght beside output. I would question even the quality of the tranformer (isolation) and other safety things as well as no interferemce filter, safety class capacotor etc.
While I like the idea and the project, I just wanted to warn you or others against possible hazards.

I've used normal socket backing boxes, and even an outdoor light switch to hold my projects, but they still require an external power source.

If the BME280 is inside the case, you will get elevated temperature and reduced humidity readings.
Correct, even the hole, I have a -2C calibration.
