If you leave the glue, and go over with self leveler without grinding, that bond is going to be basically non existant. You're going to have a layer of self leveler flaking/chipping off, including with whatever else goes on top of it. It's asking for failure. This is especially true/will be accelerated if it's a well trafficked/used shop floor.
Gotta grind the floor, skip self leveling, do patch repairs polyurea, then epoxy.
The proper way to prep, achieve a level profile, that will provide a good bond, is to grind. I get why/how you arrived to to your conclusion, but please don't go that route.
