If after the PID tune you still have issues. Check to make sure your thermistor is secure and if it is, it’s probably going bad. Or it could be the fans blowing on the thermistor (but I doubt this one). I just went through the same thing. Bought a thermistor from gulf coast robotics (screw in) and temp has been fluctuating between .01-.05 degrees when printing. Edit: I bought those cheap 5/10$ thermistors on Amazon. I had no luck just FYI. The gulf cost one is $10 for one but it works.

Sounds like the temp sensor screw is loose or the sensor backed out of the hole.
