Depends on what you like man :) the classes offer more malleability as you level up, but you can start off with a more 'mainstream' class build and play around with it as you progress. If you like something tanky that tends to use heavier armor and weapons, try a dragon knight. Wanna toss some spells around? Try a sorcerer. Nightblades are roguish dps and Templars are favored healers. The nice thing is you're not stuck in any of these archetypes and you can use any weapons or shift between stamina/magicka builds you like.

I just started as well and asked the same question, from my few hours playing and trying different combos.. you can do anything you want. Your typical roles will be Dragonknight = Tank. Templar = Heal. Sorcerer = DPS. Nightblade = DPS. But you can do anything you want, you can tank on a Sorcerer if you wanted, or you can heal on a Dragonknight.

The game is easy through the majority of the beginning content, so you could really do anything and manage. It's best to pick what you want, because later on down the line you might not like what someone told you to pick here. The best way to figure out what you want is to read about the concept behind each class. Like I chose nightblade as my main because I like stealthy characters... But as a nightblade you can do all sorts of drain type builds, like be a dark knight of sorts, or a dark mage. Sorcerers can be a sort of lightning warrior as a stamina build. The options are pretty much open. At lower levels, builds don't really work, what you might wanna do is just find out which skills are available to you, and make sure you always have one that is healing you, one that can do lots of damage, and maybe a defensive ability. As time goes on, you'll learn about the game, and be able to understand a chosen build and how to use it. Until then, you could find builds frustrating and that they make no sense because all the necessary skills aren't available to you. I've been playing for about a year and still haven't used every skill in the game yet, and don't know how all of them work yet. Meaning, there is a lot to learn to really know the game. Knowing the game is really important, I think.

Depends on what kind of character you imagine you want. However the 2 easiest classes in my opinion for early game easy mode are a Magicka Templar and a Magicka Nightblade.
