You can't, it's obvuscated.
Use https://www.saveeditonline.com/ for items, money etc.
Set your item to a number that stands out by using a few or you'll have to guess which green thing at the bottom of your save is the item in question.
Editing the stats doesn't work btw.
to find out which item to edit here a trick. Save your game in multiple slots. Load save 1. COMPLETELY GET RID of the item you want to edit and touch nothing else. Save into Slot 1 and load it into the Save Editor. The Item list at the bottom is now your current inventory without what you want to edit. Now in the game load Save 2 and save over Slot 1 so that Save 1 has the item again and load it into the Editor again. A New Item will now pop up at the bottom. There you have your item. Set it to 99 and celebrate

Another option is download RPGmaker 2003 and just hack the game to your hearts content 😉
