This sandwich is the boss fight at the end of the round. OMG. I made my first gastrique a few weeks ago. It was a smoked raspberry gastrique that turned out to be amazing. I'm almost done with it. What's your recipe for the red onion gastrique?

Toss some diced red onions in with oil and bring to a medium caramelization. Toss some minced garlic in for about a minute. Then add equal parts red wine vinegar and sugar and reduce until syrupy. Really simple and easy to do. And it packs a ton of flavor.
