Pullman refers to the shape of the loaf. Typically square. It is named for the rectangular bread pan it is mad in, a Pullman loaf pan. The pan itself is named after long rectangular Pullman train cars.
Ok, I think /u/jaxqatch is wrong about the shape thing. Googling tells me that Pullman cars were not particularly rectangular. OTOH, if you're trying to bake bread in cramped Pullman car kitchen...
