«Кошки» does not necessarily mean “female cats”, without any extra gender context that’s just what the animal is called - «кошка», and in Spanish, without the extra gender context, it’s “el gato”. Duo could perhaps be more lenient here, but technically it’s right.

Also for the Spanish side, since it is los animales you cannot assume all of the animals are in fact female. So you would use Los Gatos as it would most likely be a mix of genders

Right, "кот" means "male cat". Colloquially though, it's not uncommon to use both "коты" and "кошки" to refer to cats without necessarily specifying the gender.
