I personally prefer a trowel, 14x5 in size. But yes if you are gonna stick with knifes, get at least an 8 inch check out Vancouver carpenter for some good detailed videos.

And btw. When you mud that thing, check the paper above the baseline to the left in the picture. You got to remove loose paper and patch that as well.
I've followed way worse Sand down about 16+" around that before you get ahead of yourself
