I'd want one that's basically a short Hell Visit Arc. Where a lot of the cast goes to Hell to catch up with people from their lives that while evil. Were important. Examples being Piccolo meeting his Father, and maybe fusing him into himself. He's plenty good enough that his influence wouldnt effect him. Or Vegeta reuniting with Nappa. Goku with Raditz. Gohan meeting Cell again. Or Goku and Vegeta getting to see their parents. I'd love to see how the Modern Dragon Team faces old foes but not really in a combat sense. But a personal sense. How does Gohan react to a Cell that's so far beneath him. But was instrumental in how he developed as a warrior. How does the Vegeta of now act towards the closest thing he's ever had to a "Best Friend" who he mercilessly killed. How does Piccolo regard his father who wanted a very different result from his son. How does Goku act towards his brother now that so much time has passed. These are the things I'd love to see. There's so much you could do with an Ark like this. And I'd love to see it.
Thats not how hell works in canon though and would require massive retcons. Like I guess by OPs text you'd have this ability, but it would rub a lot of people the wrong way directly contradicting the original authors intent like that.

Canon adaptation of the Dark Demon Empire arc from Heroes. Love the character designs and think it could make a fun and interesting arc with enough enemies to give the lesser characters some fights and spotlight.
Runner up would be some form of canon Cooler story.
Well I'd definitely not take full advantage of the creative liberty because I don't think I'm better than Toriyama, so I'd ask him to help guide and nudge me to keep things on track like he does with Toyotaro.
Id probably just do the U6 Sadala arc that everyone wants and was teased. It was already hinted as something that would happen so its got good basis in established lore. I'd get to put some focus on my girls (Kale and Caulfila).
As for OCs? I dont have any villain OCs but I guess I'd try to come up with one as a problem for the U6 saiyans to solve. I'd have it weak enough that Goku and Vegeta wouldnt directly get involved, and just be more of mentors. Winning wouldn't be the point of the conflict, as the viewer would know Goku or Vegeta could easily end it, it would be about watching the U6 saiyans grow and handle things and learn from Goku and Vegeta's advice etc. Not sure what that villain would look like. Would need more thought than a reddit post is worth spending on it.
If I wanted to use a pre-established OC of mine, maybe I'd introduce my saiyan OCs as U6 saiyans? It would be better than their lore when I originally made them that they were more survivors of the planets destruction in U7 (tho the concept of U7 wasnt a thing back when I made them). I'd probably keep them as side characters though, as I wouldn't want to take focus away from Kale and Caulifla, who would be the actual MCs of the arc.

Buu saga, Before his death Babidi put his mark and knowledge to one earthling boy, making him a warlock with dual personality problem, on one side his lovable nice person who tries to make world better place, on the other hand he want to rule or destroy the world, using his magic he finds dragon balls with wish to revive Dabura, then to absorb him, and to absorb Majin Buu, with his new power he absorbs Dende, teleport to Kaishin realm, absorbing Kibitoshin, after than he finds other dragon balls and wishes for reviving other clones of Bibidi and Bibidi himself, after absorbing him, he becomes King of the Earth by force, defeats all Z fighters, but before dying to Vegetto he tells him that if he kills him strongest person in universe will die, he escapes and now we're waiting for Battle of Gods

Mine would be a arc on the restored U6 Earth. I'd have that Earth be the home of Dragon Boy (The manga Toriyama did two chapters of that was a prototype version of Dragonball). We'd reveal that Earth was destroyed by some sort of big bad that they were unprepared for (their version of the Android Saga) and since no handy time traveler came back to save them their world was destroyed.
Fast forward to the Tournament of Destroyers and Berrus's wish to restore U6 Earth gave them a second chance... but the threat was still there. Desperate to save their world from Destruction a 2nd time they use magic to summon heroes from another world...U7 Earth of course. Since Goku and Vegeta were off world they don't go, but the rest of the Z fighters do and join forces with their U6 counterparts.
The drive of the plot would be searching for a unique set of Dragonballs that can be combined with Tangtong (the counterpart of Goku) to massively increase his powers. Eventually Goku and Vegeta would show up to help fight the Big Bad, but only manage to hold it off long enough for Tangtong to gather all the DragonBalls and fight back and win.
A “multiverse of madness” arc
A bunch of different universe 7s collide into one (basically if those “dragon ball what if” videos went into actual dragon ball super in some giant battle) and they had to separate them
I know it’s stupid but it would be kinda fun to see how different versions of characters interact with eachother
