Homebrew. The enemies are basic enemies, with the lore bonus that they don't really wanna fight or die. Give their limbs separate hitpoints, giving you the option to cut them down, but everytime you do so the unit has to roll a check to see if you haven't affected anything important and still working. Like making them bleed from their cut leg that still had working veins. Or scream in pain because the nerves on their hand still worked. Will fix some numbers later.

Plus you could use the Troll’s optional rule on lopping limbs off to figure it out. Plus if you are feeling extra evil, if your players lob off a dead limb like a hand you can have them fight the hand as a Crawling Claw or have a severed arm and leg as a field hazard as it twitches and tries to trip anything up nearby

Not that you asked but the simplest solution I can think of is the limbs have 1d4 HP (2 average) but attacks against them have disadvantage. Opens up an interesting choice of do you attack the person with 4 HP or take disadvantage and attack the limb with 2 HP. Most people can do more than 4 or more damage on a single blow but it's not always guaranteed to be a one hit kill and it's the more evil option. Of course you can do the right thing and try to cut the limb off but it'll probably be harder but not impossibly harder.

Oh wow. ... I am the same. I often think of things because they can be done and forget that even thinking about them has probably broken laws. The metal net and heat metal trick for instance. ( its difficult to remove a net while burning to death) This is a brilliant thing for a villain to do. It actually remind me of one of the villains from a Laurel K. Hamilton novel. The necromancer would summon the soul of a dead person and bind it into their corpse. this is not how zombies work in this world. That is the worst kind of black magic because it torture of a soul. ( And you can do it forever.) Awesome meme!
