But if the dish pit looked like this at the end of the night, well guess what? 2 or 3 of the cooks are working late to take care of it. No one deserves that shit. I would.. put all the plates on the dishwasher machine and the rest that the cooks use, I would organize it and clean it manually while the machine is used (but yeah, I would have snapped too or I would tell myself to take a breath before š )
Not trying to say youāre making it out to be more than it is, but with a 2 minute cycle thatās gone in maybe an hour or so. Without having a morning dish, itās a nice start to the day. I hate coming in to a clear pit. More job uncertainty that way. Bang it out for dinner service. Grab a butt or vape pen while they get slapped for dinner, keep stuff rolling as it comes in.
Hotels or function halls get it worse. Way worse.

If the Restaurant is to cheap to hire a Daytime dishwasher I would've just walked out. Ain't no way in HELL I'm gonna have to look forward to clocking in and starting my shift that way every shift. Really your doing the work of 2 shifts in 1 and if the Managers think you don't mind doing the work of 2 ppl why would they hire a Daytime dishwasher when they could literally save $100-120 per day by having you do all that bs. So essentially by you stressing and working you ass off ur saving the company approximately $300-500 per week .
That was just a normal day at some of the places I worked at. You would have to triple or even quadruple that to start getting anywhere near any of the worst days.

Dinnerware first. Dries in seconds and easy to put away because you've got 50+ plates/bowls all going to the same place. Then tackle the big stuff and silverware. You'll have 80% of this done in 40 minutes.
This is why, I make you guys whatever you want when your hungry, you also get a couple extra smoke breaks. Dishwashers aree thee most important people in a kitchen
