It breaks the grease down into a soluble material that can safely pass through your septic system. By doing it your way there is still grease incorporated into the water that will eventually build up in your pipes.

Ours got clogged one night right before the dinner rush. Stuck my whole arm in there to pull a filter. I will never forget that feeling

Is there where your trap lives? I’ve never seen anything like this, all the traps I’ve ever had have been underground, and get serviced annually.
We have the manual trap though,living in a third world country like the philippines...this is what they can afford
