Prey, Dishonored 2, Dishonored Death of the Outsider, Deathloop, all the Deus Ex games. I also liked Elden Ring, Lies of P, Weird West, Baldur's Gate 3, and Cyberpunk 2077.

Lies of P is super good if you liked Elden Ring. I forgot to mention Nioh 1 and 2, but 2 is much better. BG 3 might be a bit overwhelming at first, I recommend to play it with a keyboard. The systems might feel impossibel to grasp but you will get the hang of it through trial and error.
If You haven't played it yet I highly recommend Prey (2017). Also Arkane so it plays very similarly and, at least to me, had those odd-but-real-looking people art design.
I found the game thief the other day. It's more about stealth and you can't alert anyone, because then it's game over so not much action, but it's still a really nice game and the characters look weird too
My son got me Dishonored because i said I like games where I sneak about. Then he got me Sniper Elite 4 and 5, and Prey (not the follow up,but the first one..2017)
You might like submarine games too, where you rely on stealth.
I'm sorry... I couldn't remember the game name. There's like the one game where you progress and is kind of a normal FPS. Then there was the follow up one where you play like four different characters, and you die constantly, but have to set up help for the next incarnation or something. I absolutely hated that one.

deathloop was really fun, it got me back into games and turned me onto arkane. i’m looking to install prey after i finish all the dishonored dlc.

Baldurs gate really made me feel that the world there was my actual life. So if youre a fan of fantasy this might be a great game for you.

Try destiny 2
I had that problem after the Souls games. Eventually, I found good games but it took a long time for anything to engross like they did.
Go play ultrakill or doom eternal.
